Instant Pot Beef Stew with 5 Spice

Regular Beef Stew (or Guinness Beef Stew if you’re a beer drinker) is awesome on its own, but I happen to just love this 5 Spice version. I lovvvve the flavor and I think it’s perfect in this stew. Adds just enough difference to really make it stand out. You can buy the blend in any grocery store spice aisle.

What is 5 spice (or all spice)?

Five Spice is a seasoning blend traditionally used in Chinese cooking. It typically includes star anise, sichuan pepper, black pepper, cloves, and cinnamon. You can make it on your own or buy it premade at any grocery store in the spice aisle. It’s absolutely DELICIOUS in this Instant Pot Beef Stew Recipe. You’re going to love it!

What veggies are in this stew?

We loaded this 5 Spice Beef Stew with tons of healthy veggies like carrots, potatoes, turnips, parsnips, and onion. If you like peas, you can throw those in as well. My dad HATES peas so if my Mom is helping in the kitchen, they’re usually the first to go. :) Pat hates onions but I could care less. He’s just flat out wrong when it comes to onions!

Can you use chicken broth in a beef stew?

Is the Instant Pot safe? Can it explode?

The Instant Pot has 10 different safety mechanisms in place to make sure it doesn’t explode. It’s not anything like scary pressure cookers of the past. Most accidents are totally due to user error and can be easily avoided. Be sure to follow instructions but you’re in good hands.

How can you thicken a beef stew?

If you want your stew thicker, mix one tablespoon of cornstarch with one cup of stew liquid and stir until a paste forms. Add it in gradually to your Beef Stew, stirring as you combine.

Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon toasted sesame oil or 1 tablespoon butter
  • 2 pounds beef stew meat
  • teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon Chinese Five Spice seasoning
  • 1 medium sweet yellow onion diced
  • 3 cloves garlic minced
  • ¼ cup tomato paste
  • 32 ounces low-sodium beef broth
  • 3 tablespoons Hoisin sauce
  • 1 cup chopped celery
  • 1 cup scrubbed and chopped carrots
  • 1 sweet potato peeled and chopped
  • 2 parsnips peeled and chopped
  • 2 turnips peeled and chopped
  • 2 tablespoon minced fresh cilantro

Instructions

  • Sprinkle the stew meat with salt, pepper and Five-spice seasoning.

  • Set the Instant Pot to sauté. After 1 minute, add the olive oil and sesame oil. Place half of the stew meat in the pot and cook it until meat has seared on both sides. Transfer the meat to a plate and repeat with the remaining stew meat. Set aside.

  • If needed, add 1 tablespoon olive oil to the Instant Pot. Add the onion and sauté until onion is translucent. Add the minced garlic and stir.

  • Add the tomato paste, stir and cook for 1 minute.

  • Pour in the beef broth and scrape the bottom of the pot to loosen the brown bits.

  • Add Hoisin sauce and the seared beef. Mix well.

  • Add celery, carrots, sweet potato, parsnip and turnips.

  • Close the lid on the Instant Pot and be sure the steam valve is closed.

  • Set the manual button to 25 minutes of high pressure and allow the pressure to release naturally.

  • When pressure has released, remove the lid and taste the stew. Season, to taste, with salt and pepper.

  • This is delicious served on a bed of white rice and with a side of roasted broccoli.

  • Enjoy!

  • *Note: If stew needs thickening, mix 2 tablespoons cornstarch with 2 tablespoons cold water and add it to the stew. Stir to thicken.

FAQs

Why is beef stew tough Instant Pot? ›

Additionally stew meat tends to have more tough gristle, which will never get tender. Using a large piece of boneless chuck allows you to easily trim off all the unwanted parts first, then cut the beef into uniform 1 1/2-inch pieces that will cook more evenly in the pressure cooker.

What is the secret to tender beef stew? ›

The most important key to making stew meat tender is being sure to cook it for a long time. If you want super tender beef, you'll need to cook it on a low heat in a Dutch oven on the stove or a slow cooker for at least a few hours.

What gives beef stew more flavor? ›

Add spices such as turmeric, coriander and cumin at the early stage of cooking, when you are frying onions and garlic, to enhance the taste of the beef stew. Fresh herbs like coriander and bay leaves also contribute a distinct flavour without making the dish too spicy for the younger members of the family.

Is stew better in the slow cooker or instant pot? ›

More From Good Housekeeping. Taste: For overall taste, the pressure cooker was the hands-down winner. Beef, carrots, and potatoes all retained their rich flavors. After 8 hours in the slow cooker, they emerged bland and seemed to need salt.

Can you overcook stew in a pressure cooker? ›

Unfortunately, once you overcook a piece of meat in the pressure cooker, there's no going back. You'll be left with a pile of dry, crunchy, tasteless fibers and no amount of additional pressure cooking is going to put that moisture back into the meat.

Does pressure cooking longer make meat more tender? ›

Pressure cooking, like slow cooking, will tenderize tough cuts of meat like beef brisket, beef chuck, pork shoulder and lots of other cheaper, tougher cuts. Pressure cooking (or slow cooking) is not the best approach for cooking expensive, tender steaks or rib roasts.

How do you make beef stew taste richer? ›

If it tastes off-balance, add some finishing flavors to bring it to the next level. Try adding soy sauce or Worcestershire for extra savory (or umami) flavor, a touch of honey or brown sugar for sweetness, lemon zest or vinegar for brightness or chili powder or smoked paprika for spice and depth.

What meat is best for beef stew? ›

Chuck. Chuck is one of the leaner types of beef, making it perfect for stews because it melts into delicious pieces as it cooks. A chuck roast has a large amount of connective tissue, which allows it to retain its moisture during the cooking process.

How do you make beef stew soft and tender? ›

But I believe the secret to the tender beef is… slow roasting the stew in a covered pot in the oven! That's it! No fancy pressure cooker needed!

Why put tomato paste in beef stew? ›

I contacted Laurence to get the lowdown on why she adds tomato paste to her beef stew. "I include tomato paste in many braised recipes because it adds a depth of flavor without increasing the liquid quantity in the dish," Laurence explains.

Why add tomato paste to stew? ›

Tomato paste adds crucial flavor and body to the stew meat when cooked with herbs, garlic and wine. If you don't have any on hand, try one of these tomato paste substitutes.

What are the best vegetables to put in beef stew? ›

Vegetables that work well in a beef stew include Hardroots vegetable, carrots, potatoes, onions, celery, and parsnips. These vegetables add flavor and texture to the stew while complementing the richness of the beef. You can also consider adding mushrooms, turnips, or peas for variety.

Why does my Instant Pot burn stew? ›

Lai says the most common cause for a burn notification is not adding enough liquid to the pot or using thick ingredients like a thick tomato sauce. "If you sauté prior to pressure cooking and you do not properly deglaze the bottom of the pot, food stuck to the bottom can cause the burn notification," says Lai.

Is the meat stew setting on Instant Pot high pressure? ›

Instant Pot Instructions: Place everything in the Instant Pot. Select the stew/meat setting (about 35 minutes, high pressure).

What is the stew setting on Instant Pot? ›

Select the Meat/Stew button. The default Instant Pot meat setting is pre-programmed to set the pot to cook at High pressure for 35 minutes, which is suitable for most dishes like beef stew or pulled pork.

How do you fix tough beef stew? ›

Simmer, don't boil. It starts out tough but long slow cooking will melt the connective tissue. If you cook past the time when the connective tissue is melted, you boil out all the water in the meat and it becomes tough again, like a well-done steak. So check your stew/braise and when the meat is tender, it's done.

How do you make beef stew meat not tough? ›

Cook it slow and steady.

This gives collagens in the tough muscle tissue time to melt and make the meat tender. Try tasting a bite after an hour, two hours, and three hours — you'll see how the meat goes from chewy to pretty good to fall-apart tender.

Can you overcook stewing beef in a slow cooker? ›

Can you overcook stew in a slow cooker? A slow-cooked stew is pretty forgiving, but cooking beyond the point of tenderness can dry out the meat as well as the cooking juices and sauce. If serving is delayed, switch your slow cooker to warm until you're ready to eat.
